- Wash all fruits thoroughly under cold running water. Pat dry with clean kitchen towels. Remove peach pits and slice into uniform wedges, approximately 1/2-inch thick.
- In a small mixing bowl, whisk together honey, fresh lime juice, lime zest, vanilla extract, and sea salt until smooth.
- Place sliced peaches, strawberries, blueberries, and grapes in a large serving bowl. Pour the honey-lime dressing over the fruit mixture and gently fold the ingredients together.
- Sprinkle chopped mint leaves over the dressed fruit and gently toss once more to distribute the herbs throughout the salad.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes before serving.
Notes
Use ripe peaches for sweetness and proper texture. Avoid over-mixing to preserve fruit integrity. Dress the salad no more than 2 hours before serving to prevent sogginess. Fresh lime juice is preferred over bottled.
