Ingredients
  

  • 1½ cups all-purpose flour
  • ½ cup almond flour
  • ½ cup powdered sugar
  • ¾ cup unsalted butter, softened
  • 1 teaspoon almond extract
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup raspberry jam or preserves
  • ¼ cup sliced almonds (optional, for topping)

Method
 

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the almond extract, vanilla extract, and salt to the butter mixture. Mix until well combined.
  4. Gradually add the all-purpose flour and almond flour to the wet ingredients. Mix on low speed until a soft dough forms.
  5. Scoop about one tablespoon of dough and roll it into a ball. Place it on the prepared baking sheet.
  6. Create an indentation in the center of each ball to hold the jam.
  7. Fill each indentation with about ½ teaspoon of raspberry jam.
  8. Bake for 12-15 minutes, or until the edges are just beginning to turn golden.
  9. Let the bites cool on the baking sheet for five minutes, then transfer them to a wire rack to cool completely.

Notes

These bites can be made ahead of time and stored in an airtight container for up to five days. They freeze well for up to three months.
