Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small cubes
  • 3/4 cup whole milk, cold
  • 2 tablespoons baking soda
  • 4 cups warm water
  • 3 tablespoons melted butter, for brushing
  • Coarse sea salt, to taste

Method
 

  1. Preheat your oven to 425°F and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  3. Add the cold butter cubes to the flour mixture and work it into the flour until it resembles coarse crumbs.
  4. Pour in the cold milk and stir gently until the dough comes together.
  5. Turn the dough out onto a lightly floured surface and pat it into a rectangle about one inch thick. Cut into small squares.
  6. In a large pan, combine warm water and baking soda, stirring until dissolved.
  7. Gently place biscuit bites into the baking soda bath for 20-30 seconds, then flip and soak the other side.
  8. Remove with a slotted spoon and place on the prepared baking sheet.
  9. Brush the tops with melted butter and sprinkle with coarse sea salt.
  10. Bake for 12-15 minutes until puffed and golden brown.

Notes

Keep ingredients cold for tender biscuits. Don't skip the baking soda bath for the pretzel flavor. Serve warm for the best taste.
