  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 cups mixed vegetables
  • 2 green onions, sliced
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste

Method
 

  1. Cut chicken into bite-sized pieces, pat dry, season with salt and pepper, and toss with cornstarch.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and sesame oil.
  3. Heat vegetable oil in a large wok or skillet over medium-high heat.
  4. Add chicken pieces in a single layer and cook undisturbed for 3-4 minutes until golden brown, then flip and cook another 2-3 minutes until cooked through.
  5. Push chicken to one side and add mixed vegetables, stir-frying for 2-3 minutes until crisp-tender.
  6. Pour the honey garlic sauce over chicken and vegetables, toss to combine, and cook for 1-2 minutes until sauce thickens.
  7. Garnish with sliced green onions and red pepper flakes, and serve immediately.
