Method
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- Mash the overripe bananas in a large mixing bowl until mostly smooth.
- Mix the melted butter into the mashed bananas, then add sugar, beaten egg, and vanilla extract.
- Sprinkle baking soda and salt over the mixture, then add flour and gently fold together.
- If using nuts or chocolate chips, fold them in now. Pour batter into prepared loaf pan.
- Bake for 55-60 minutes until a toothpick inserted in center comes out with a few moist crumbs.
- Cool in pan for 10 minutes before transferring to a wire rack.
Notes
Ensure bananas are overripe for maximum sweetness. Avoid overmixing to prevent dense bread. Store wrapped at room temperature for up to 4 days.
