Ingredients
  

  • 2¾ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 2 cups powdered sugar
  • 3-4 tablespoons milk
  • Mini chocolate chips

Method
 

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually mix in flour and salt until just combined.
  5. Wrap dough in plastic wrap and refrigerate for 30 minutes.
  6. Roll chilled dough to ¼-inch thickness on a lightly floured surface.
  7. Use a ghost-shaped cookie cutter to cut shapes and place on prepared baking sheets.
  8. Bake for 10-12 minutes until edges are just set but not browned.
  9. Cool on baking sheets for 5 minutes before transferring to wire racks.
  10. Whisk together powdered sugar and milk until smooth for icing.
  11. Spread icing over each ghost shape and press mini chocolate chips for eyes and mouth.
