  • 2 large English cucumbers, sliced into ¼-inch rounds
  • 1 pound fresh mozzarella cheese, sliced into ¼-inch rounds
  • 3 large ripe tomatoes, sliced into ¼-inch rounds
  • ¼ cup fresh basil leaves, whole or chiffonade
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar or balsamic glaze
  • 1 teaspoon sea salt or kosher salt
  • ½ teaspoon freshly cracked black pepper
  • Optional: ¼ cup pine nuts or chopped walnuts

Method
 

  1. Wash the cucumbers thoroughly and slice them into uniform ¼-inch rounds using a sharp knife or mandoline slicer. Pat the cucumber slices dry with paper towels to remove excess moisture.
  2. Cut the tomatoes into ¼-inch slices, removing any tough stem areas. Slice the fresh mozzarella to the same thickness as your vegetables.
  3. On a large serving platter, alternate layers of cucumber, mozzarella, and tomato slices in an overlapping pattern.
  4. Distribute fresh basil leaves evenly across the arranged ingredients.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until well combined.
  6. Drizzle the dressing evenly over the entire salad. If using nuts, sprinkle them on top for added texture.
