  • 2 cups fresh pumpkin seeds
  • 2 tablespoons melted butter or coconut oil
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamo
  • 1/2 teaspoon salt
  • 1/4 teaspoon vanilla extract (optional)
  • Pinch of nutmeg (optional)

Method
 

  1. Remove seeds from your pumpkin and separate them from the pulp. Rinse thoroughly under cold water, rubbing away any remaining orange flesh. Pat completely dry with paper towels.
  2. Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
  3. In a medium bowl, combine melted butter, sugar, cinnamon, salt, and vanilla. Add the clean, dry pumpkin seeds and toss until every seed is evenly coated.
  4. Spread seasoned seeds in a single layer on the prepared baking sheet.
  5. Bake for 15 minutes, then flip seeds with a spatula. Continue roasting for another 10-15 minutes until golden brown and crispy.
  6. Allow to cool completely on the baking sheet.

Notes

Ensure seeds are completely dry before seasoning. Avoid overcrowding the baking sheet for even cooking. Store in an airtight container for up to one week.
