Ingredients
  

  • 12 ounces penne pasta
  • 1 cup dried cranberries
  • 1 cup celery, diced
  • ½ cup red onion, finely chopped
  • ¾ cup pecans or walnuts, chopped
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley, chopped (optional)

Method
 

  1. Step 1: Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to package directions until al dente, usually about 10-12 minutes. Drain thoroughly and rinse under cold water.
  2. Step 2: In a medium bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, honey, salt, and pepper. Adjust seasoning to taste.
  3. Step 3: In a large mixing bowl, combine the cooled pasta, dried cranberries, diced celery, chopped red onion, and nuts.
  4. Step 4: Pour the dressing over the pasta mixture and gently fold everything together until well combined.
  5. Step 5: Cover and refrigerate for at least two hours before serving.

Notes

This salad can be made a day ahead for better flavor. Reserve some dressing to stir in before serving if needed. Store in an airtight container in the refrigerator for up to four days.
