Ingredients
  

  • 6 cups mixed salad greens (spring mix or arugula)
  • ½ cup dried cranberries
  • 4 ounces crumbled goat cheese
  • ½ cup candied pecans (or plain toasted pecans)
  • ¼ cup red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Method
 

  1. In a small bowl or jar, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, and a pinch of salt and pepper. Set aside.
  2. Wash and thoroughly dry your salad greens.
  3. Place your greens in a large serving bowl.
  4. Scatter the dried cranberries evenly over the greens, followed by the crumbled goat cheese.
  5. Add the thinly sliced red onion.
  6. Sprinkle the candied pecans over the top.
  7. Just before serving, drizzle the dressing over the salad and toss gently.
  8. Serve immediately.

Notes

Dress the salad right before serving to prevent wilting. Use fresh, quality ingredients for the best flavor.
