Ingredients
  

  • 3 large overripe bananas
  • 1/3 cup melted butter (or coconut oil)
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour (or whole wheat)
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup milk

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with butter or cooking spray.
  2. Mash the overripe bananas until mostly smooth with some small chunks remaining.
  3. Add melted butter to the mashed bananas and mix well. Stir in brown sugar, beaten egg, vanilla extract, and milk until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet mixture using a wooden spoon or spatula.
  6. Gently fold in most of the chocolate chips, reserving some for topping.
  7. Pour batter into prepared loaf pan and sprinkle remaining chocolate chips on top. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs attached.

Notes

Store wrapped in plastic wrap or aluminum foil at room temperature for up to four days. For longer storage, freeze individual slices for up to three months.
