Ingredients
  

  • 2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8-10 slices bacon, cooked and crumbled
  • 4 large Russet potatoes, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • ½ cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • Fresh chives or green onions for garnish

Method
 

  1. Preheat your oven to 375°F. Coat a 9x13-inch baking dish with cooking spray or butter.
  2. Cook bacon until crispy, then crumble it into bite-sized pieces.
  3. Season chicken pieces with salt, pepper, garlic powder, onion powder, and paprika.
  4. In a large bowl, combine cream of chicken soup, sour cream, and milk. Whisk until smooth.
  5. Layer half of the sliced potatoes in the baking dish, followed by half of the chicken, half of the bacon, half of the creamy sauce, and half of the cheese. Repeat the layers.
  6. Cover with aluminum foil and bake for about 60 minutes. Remove foil and bake for an additional 20-30 minutes until potatoes are tender and cheese is golden.
  7. Let rest for 10 minutes before serving.

Notes

You can prep this dish ahead of time and refrigerate it for up to 24 hours before baking. For freezing, assemble and cover tightly, then freeze before baking.
