Ingredients
  

  • 2 pounds ground beef (80/20 blend)
  • 1 large head green cabbage (about 3 pounds), chopped
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup long-grain white rice, uncooked
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned.
  3. Add diced onion to the beef and cook until softened. Stir in minced garlic.
  4. Mix in tomato paste, smoked paprika, and thyme. Cook for 2 minutes.
  5. Add chopped cabbage in batches, stirring until it begins to wilt.
  6. Stir in uncooked rice, drained diced tomatoes, and beef broth. Season with salt and pepper.
  7. Pour the mixture into the prepared baking dish, cover with foil, and bake for 45 minutes.
  8. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10-15 minutes.

Notes

Avoid overcooking the cabbage initially. Use fresh cheese for better melting. Allow the dish to rest for 5 minutes before serving.
