Ingredients
  

  • 2 pounds deli roast beef, thinly sliced, preferably medium-rare
  • 6-8 onion hamburger buns or regular sesame seed buns
  • 2 tablespoons butter, for toasting buns
  • 1 cup beef broth, low-sodium preferred
  • 3 tablespoons unsalted butter, for cheddar sauce
  • 3 tablespoons all-purpose flour, for the roux
  • 1½ cups whole milk, room temperature
  • 2 cups sharp cheddar cheese, freshly shredded
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, freshly ground

Method
 

  1. Prepare the cheese sauce by melting butter, whisking in flour, adding milk gradually, and stirring in shredded cheddar until smooth.
  2. Warm the roast beef in beef broth over medium heat until heated through.
  3. Toast the buns by buttering the insides and cooking them butter-side down until golden brown.
  4. Assemble the sandwiches by placing roast beef on the bottom bun, topping with cheddar sauce, and adding the top bun.

Notes

Use freshly shredded cheese for a smoother sauce. Store components separately for best results. Reheat gently.
