A refreshing and hydrating drink made from ripe watermelon, perfect for summer days.
Ingredients

- 1 medium seedless watermelon (about 5–6 lbs)
- 1–2 tablespoons fresh lime or lemon juice (optional)
- Fresh mint leaves (optional, for garnish)
- A touch of honey or simple syrup (optional, if extra sweetness is desired)
- Ice (for serving)
Instructions
- Wash the outside of the watermelon thoroughly. Cut it in half, then into quarters, and then into manageable wedges. Carefully cut away the green rind and discard. Chop the red flesh into 1-2 inch cubes.
- Transfer the watermelon cubes to your blender. You may need to do this in batches if your blender isn’t large enough. Add the optional lime or lemon juice now. Blend on high speed until completely smooth, about 30-60 seconds.
- If you prefer a pulp-free experience, strain the blended watermelon mixture through a fine-mesh sieve into a pitcher or bowl. Discard the remaining pulp.
- Transfer the fresh watermelon juice to a pitcher or sealable container and refrigerate for at least 30 minutes, or until thoroughly chilled. Serve over ice, garnished with fresh mint leaves or a lime wedge.
Notes
Fresh watermelon juice is best enjoyed within 2-3 days when stored in an airtight container in the refrigerator.
